Assessing speaking and listening is currently done anecdotally by having students respond to questions that I ask or that come from other students or that come from an English acquisition curriculum's CD sets in either a one-on-one or group setting.

Thanks for so much great information, German! I love Gabcast and the download helper for Firefox. If I were in the classroom I know that these would be valuable resources. I will be sharing this info with the teachers in my area. They will love it!

I would use Audacity to have the students practice oral langauge. It would be great to have them verbalize a response to specific questions. It would also be a means for them to listen to others responses to check for accuracy of their peers.
